We are going to discuss a healthy Paleo Breakfast Muffins recipe. In this recipe, we will make 12 large muffins. This recipe will be absolutely egg and grain free, so what will we do? Yes, we plan to make our healthy Paleo Breakfast Muffins recipe with Pumpkin Zucchini. We need little more ingredients for this recipe, however we will cook a healthy paleo diet recipe for paleo breakfast.

Here’s What we need to cook Paleo Breakfast Muffins

  • Two table spoons flax meal

  • Half cup coconut flour

  • Half cup tapioca flour

  • Six table spoons water

  • One cup almond flour

  • Two table spoons baking soda

  • One tea spoon sea salt (this is not too much important)

  • One table spoon cinnamon

  • Two cups freshly baked pumpkin or you can use canned

  • One teaspoon apple cider vinegar

  • ¼ cup coconut oil

  • One table spoon allspice

  • One cup dates, pitted

  • Half (10 oz) bag frozen berries

  • ¾ cup zucchini, grated well. This is the main ingredient for this recipe

  • ¾ cup nicely sliced almonds or you can use walnuts

  • And the lastly paper muffin liners. Those are all ingredients what we need to cook Pumpkin Zucchini Muffins. Without using egg and grain we can make a healthy recipe that we going to cook. So excited!

Let’s start. First we have to preheat oven upto 350 degrees Fahrenheit (350° F). Now mix flax meal and water very nicely and let us sit for five minutes. You can wait until it forms a gooey, gel-like consistency. Next mix almond flour, tapioca flour, coconut flour, baking soda. Also mix sea salt, cinnamon and allspice in a large bowl. A lot of ingredients!! Whatever, now combine dates, pumpkin, flax meal mixture, coconut oil, apple cider vinegar in a food processor. Try to combine until dates are roughly chopped and then fold into dry ingredients. Now you have to fold all berries, zucchini and nuts into the batter. Next spoon into paper lined muffin tins. I think you enjoy to cook this awesome recipe. Almost all of the works have been ended. Now bake for 30 minutes, then muffins will still be very moist, even gooey on the inside. When the muffins are too moist, turn off oven. Now you have to continue to bake until oven has become cooled.
